Ingredients
250 gms dried tagliatelle pasta
30 gms dried porcini mushrooms
2 tbsp. butter
2 tbsp. olive oil
1 large chopped onions
2 minced cloves garlic
1/2 cup vinegar or lemon juice
1/2 cup vegetable or mushroom broth
1/2 cup heavy cream
1/2 cup freshly grated parmesan cheese(preferred) or cheddar cheeseÂ
salt and pepper to taste
chopped parsley for garnish (optional)

Preparation
In a large pot of salted boiling water, cook the tagliatelle pasta according to package . Drain the pasta and set aside.
In a small bowl, soak the dried porcini mushrooms in hot water for 10-15 minutes until they are soft. Drain the mushrooms and reserve the soaking liquid.
In a large skillet, melt the butter and olive oil over medium heat. Add the finely chopped onions and minced garlic and sauté for 2-3 minutes until the onions are translucent.
Add the soaked porcini mushrooms to the skillet and cook for 2-3 minutes until they are slightly browned.
Pour in the vinegar or lemon juice and cook for 2-3 minutes until the liquid has reduced by half.
Add the vegetable or mushroom broth, the reserved porcini mushroom soaking liquid, and the heavy cream to the skillet. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 5-7 minutes until the sauce has thickened.
Add the cooked tagliatelle pasta to the skillet and toss it with the sauce until it is evenly coated.
Stir in the freshly grated parmesan cheese or cheddar cheese and season the dish with salt and pepper to taste.
Garnish with chopped parsley if desired and serve hot.
