Ingredients

  • 60 gms sliced dried porcini mushrooms

  • 1 diced onion

  • 2 minced garlic cloves

  • 2 cup arborio rice (preferred) or any other rice

  • 1/2 cup vinegar or lemon juice

  • 4 cups vegetable or mushroom broth

  • 1/2 cup grated parmesan cheese (preferred) cheddar cheese

  • 2 tbsp. butter

  • 2 tbsp. olive oil

  • salt and pepper to taste

  • chopped fresh parsley or thyme for garnish (optional)

Preparation

Clean the porcini mushrooms: Wipe the mushrooms clean with a damp paper towel or a soft-bristled brush. If the mushrooms are large, cut them into bite-sized pieces.


  • Heat the vegetable or mushroom broth in a sauce pan and keep it warm over low heat.

  • Heat olive oil and 1 tablespoon of butter in a large pan or Dutch oven over medium heat. Add onions and garlic and sauté for 3-4 minutes, or until the onions are translucent.

  • Add sliced porcini mushrooms and sauté for 5-7 minutes, or until they are tender and lightly browned.

  • Add the Arborio rice and stir well to coat the rice with the onion and mushroom mixture.

  • Pour in the vinegar and stir until the vinegar has been absorbed by the rice.

  • Add 1 cup of the warm broth to the rice mixture and stir frequently until the broth has been absorbed. Repeat this process, adding 1 cup of broth at a time and stirring until the liquid has been absorbed before adding more.

  • Continue stirring and adding broth until the rice is tender and has a creamy texture, about 20-30 minutes.

  • Add grated parmesan or cheddar cheese, 1 tablespoon of butter, and salt and pepper to taste. Stir well until the cheese has melted and the butter is fully incorporated.

  • Remove from heat and let the risotto rest for 5 minutes.

  • Serve hot, garnished with chopped fresh parsley or thyme if desired.
