500gms sliced oyster mushrooms
1 large chopped onion

chop 1 celery stalk
1 tsp fresh thyme leaves
4 cups vegetable broth
1/2 cup heavy cream or coconut milk
salt and black pepper to taste
2 tbsp olive oil
fresh parsley leaves or coriander leaves for garnish
