Ingredients

For shiitake mushroom:

  • 200gms shiitake mushrooms, stems removed

  • 1/4 cup cornstarch

  • 2 tbsp. cooking oil


  •  salt, black pepper


For sesame sauce:

  • 1/4 cup soy sauce

  • 1 tbsp. apple cider

  • 1 tbsp. honey

  • 1 tbsp. sesame oil

  • 2 minced garlic cloves

  • 2 tsp. sesame seeds

  • 2 sliced green onions

Preparation

Cover the mushrooms in boiling water, and put something on top to keep them submerged. Soak for around 40 minutes until tender. Drain the mushrooms. If you wish you can save the liquid to use as a mushroom broth. Now squeeze out the excess water from the mushrooms. Don’t mush them to death, but just lightly squeeze them and shake off the water so they are on the drier side. Slice them into nice thick slices, about ½ inch. Toss them in the cornstarch mixed with pepper so they are evenly coated and shake off the excess.

  • Heat oil in a skillet over medium-high heat. Make sure the oil is nice and hot before adding in the mushrooms so that they fry, and not just soak up the oil. Fry the mushrooms until they are lightly golden on all sides, and no white cornstarch remains.

  • While the mushrooms are cooking,start preparing the sauce in a pan beside.

  • In a small mixing bowl, whisk together the soy sauce, apple cider, honey, sesame oil, and minced garlic.

  • Take a pan and heat it at low flame and add the sauce prepared above and cook it for 2 minutes until it thickens  

  • Add the fried shiitake mushroom into the sauce,salt according to taste and toss to coat.

  • Sprinkle the sesame seeds and sliced green onions over the mushrooms and toss again.


Serve the crispy and chewy sesame shiitake mushrooms immediately as a delicious appetizer.
