Ingredients

  • 500gms sliced wood ear mushrooms

  • 250gms of paneer diced into pieces

  • 1 sliced red bell pepper

  • 2 tbsp. soy sauce

  • 1 tbsp. oyster sauce

  • 1 tbsp. cornstarch

  • 2 tbsp. vegetable oil

  • salt and pepper to taste

  • chopped spring onions for garnish (optional)

Preparation

Clean the wood ear mushrooms: Wipe the mushrooms clean with a damp paper towel or a soft-bristled brush. If the mushrooms are large, cut them into bite-sized pieces.

  • In a small bowl, mix together soy sauce, oyster sauce, cornstarch, and 1/2 cup of water. Set aside.

  • Heat vegetable oil in a large pan or wok over high heat. Add sliced wood ear mushrooms and stir-fry for 2-3 minutes or until they are slightly browned.

  • Add cubed paneer to the pan and stir-fry for an additional 2-3 minutes or until they are lightly browned.

  • Add sliced red bell pepper and onion to the pan and stir-fry for an additional 2-3 minutes or until they are slightly softened.

  • Add minced garlic and ginger to the pan and stir-fry for 30 seconds or until fragrant.

  • Pour the sauce mixture over the vegetables and paneer and stir until the sauce thickens and coats the vegetables and paneer evenly.

  • Season with salt and pepper to taste.

  • Garnish with chopped green onions if desired.
