Ingredients
500gms sliced wood ear mushrooms
250gms of paneer diced into pieces
1 sliced red bell pepper
1 sliced onion
2 minced garlic cloves
1 tsp. minced ginger
2 tbsp. soy sauce
1 tbsp. oyster sauce
1 tbsp. cornstarch
2 tbsp. vegetable oil
salt and pepper to taste
chopped spring onions for garnish (optional)
Preparation
Clean the wood ear mushrooms: Wipe the mushrooms clean with a damp paper towel or a soft-bristled brush. If the mushrooms are large, cut them into bite-sized pieces.
In a small bowl, mix together soy sauce, oyster sauce, cornstarch, and 1/2 cup of water. Set aside.
Heat vegetable oil in a large pan or wok over high heat. Add sliced wood ear mushrooms and stir-fry for 2-3 minutes or until they are slightly browned.
Add cubed paneer to the pan and stir-fry for an additional 2-3 minutes or until they are lightly browned.
Add sliced red bell pepper and onion to the pan and stir-fry for an additional 2-3 minutes or until they are slightly softened.
Add minced garlic and ginger to the pan and stir-fry for 30 seconds or until fragrant.
Pour the sauce mixture over the vegetables and paneer and stir until the sauce thickens and coats the vegetables and paneer evenly.
Season with salt and pepper to taste.
Garnish with chopped green onions if desired.
