Ingredients

  • 250gms sliced shiitake mushrooms

  • 2 tbsp vegetable oil

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • 2 minced garlic cloves

  • 1 inch of ginger, peeled and grated

  • salt and pepper to taste

  • chopped capsicum and sesame seeds for garnish

Preparation

Clean the shiitake mushrooms: Wipe the mushrooms clean with a damp paper towel or a soft-bristled brush. If the mushrooms are large, cut them into bite-sized pieces.


  • Heat the oil: In a large skillet or wok, heat the oil over medium-high heat until it shimmers.

  • Add the garlic: Once the oil is hot, add the minced garlic and stir-fry for 30 seconds or until fragrant. Be careful not to burn the garlic.

  • Add the mushrooms: Add the shiitake mushrooms to the pan and stir-fry for 2-3 minutes, or until they start to release their liquid and become slightly tender and light brown.

  • Add the sauces: Add the soy sauce, oyster sauce, sugar, salt, and pepper to the pan. Stir-fry for an additional 1-2 minutes, or until the mushrooms are fully cooked and coated in the sauce.

  • Garnish and serve: Once the mushrooms are fully cooked, turn off the heat and transfer them to a serving dish. Garnish with chopped capsicum and sesame seeds (if using).
