Porcini mushroom risotto is a classic Italian dish that is rich, creamy, and full of earthy flavors. This dish is perfect for a cozy night in or a fancy dinner party.

Ingredients
60 gms sliced dried porcini mushrooms
1 diced onion
2 minced garlic cloves
2 cup arborio rice (preferred) or any other rice
1/2 cup vinegar or lemon juice
4 cups vegetable or mushroom broth
1/2 cup grated parmesan cheese (preferred) cheddar cheese
2 tbsp. butter
2 tbsp. olive oil
salt and pepper to taste
chopped fresh parsley or thyme for garnish (optional)
Preparation
Clean the porcini mushrooms: Wipe the mushrooms clean with a damp paper towel or a soft-bristled brush. If the mushrooms are large, cut them into bite-sized pieces.
Heat the vegetable or mushroom broth in a sauce pan and keep it warm over low heat.
Heat olive oil and 1 tablespoon of butter in a large pan or Dutch oven over medium heat. Add onions and garlic and sauté for 3-4 minutes, or until the onions are translucent.
Add sliced porcini mushrooms and sauté for 5-7 minutes, or until they are tender and lightly browned.
Add the Arborio rice and stir well to coat the rice with the onion and mushroom mixture.
Pour in the vinegar and stir until the vinegar has been absorbed by the rice.
Add 1 cup of the warm broth to the rice mixture and stir frequently until the broth has been absorbed. Repeat this process, adding 1 cup of broth at a time and stirring until the liquid has been absorbed before adding more.
Continue stirring and adding broth until the rice is tender and has a creamy texture, about 20-30 minutes.
Add grated parmesan or cheddar cheese, 1 tablespoon of butter, and salt and pepper to taste. Stir well until the cheese has melted and the butter is fully incorporated.
Remove from heat and let the risotto rest for 5 minutes.
Serve hot, garnished with chopped fresh parsley or thyme if desired.
