  • 500gms sliced oyster mushrooms

  • 1 large chopped onion

  • 2 minced garlic cloves

  • chop 1 celery stalk

  • 1 tsp fresh thyme leaves

  • 4 cups vegetable broth

  • 1/2 cup heavy cream or coconut milk

  • salt and black pepper to taste

  • 2 tbsp olive oil

  • fresh parsley leaves or coriander leaves for garnish

Preparation

Vegetable Broth :

This vegetable broth recipe is a great base for soups, stews, and other recipes that call for broth. Made with simple ingredients like onion, carrots, celery, garlic, and bay leaves, this broth is both flavorful and nutritious. To make the broth, sauté the chopped vegetables and garlic in olive oil until golden brown. Add water and bay leaves, and let the broth simmer for 45 minutes to an hour.   • Add heavy cream or coconut milk and stir well. Cook for 2-3 minutes or until the soup thickens.

  • Add salt and black pepper to taste.

  • Garnish with fresh parsley leaves and serve hot.
