Ingredients
500gm sliced oyster mushrooms
1 large chopped onion
2 minced garlic cloves
1 inch grated ginger
2 chopped tomatoes
1 tsp cumin seeds
1 tsp coriander powder
2 cups pea
1 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp red chili powder
1/4 cup heavy cream or coconut milk
salt to taste
2 tbsp vegetable oil
fresh coriander for garnish
Preparation
Clean the oyster mushrooms: Wipe the mushrooms clean with a damp paper towel or a soft-bristled brush. If the mushrooms are large, cut them into bite-sized pieces.
Heat the oil in a large pan over medium heat. Once the oil is hot, add cumin seeds and let them sizzle for a few seconds.
Add chopped onions and sauté for 3-4 minutes or until they turn golden brown.
Add minced garlic and grated ginger, and sauté for 1-2 minutes or until the raw smell goes away.
Add chopped tomatoes and stir well. Cook for 5-7 minutes or until the tomatoes turn mushy.
Add sliced oyster mushrooms and stir well. Cook for 5-7 minutes or until the mushrooms turn soft and tender.
Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes or until the spices are well combined.
Add heavy cream or coconut milk and stir well. Cook for 2-3 minutes or until the curry thickens.
Garnish with fresh coriander leaves and serve hot with rice or naan.
