Ingredients

  • 500gm sliced oyster mushrooms

  • 1 large chopped onion

  • 2 minced garlic cloves

  • 1 inch grated ginger

  • 2 chopped tomatoes

  • 1 tsp cumin seeds

  • 1 tsp coriander powder

  • 2 cups pea

  • 1 tsp garam masala

  • 1/2 tsp turmeric powder

  • 1/2 tsp red chili powder

  • 1/4 cup heavy cream or coconut milk

  • salt to taste

  • 2 tbsp vegetable oil

  • fresh coriander for garnish

Preparation

Clean the oyster mushrooms: Wipe the mushrooms clean with a damp paper towel or a soft-bristled brush. If the mushrooms are large, cut them into bite-sized pieces.

  • Heat the oil in a large pan over medium heat. Once the oil is hot, add cumin seeds and let them sizzle for a few seconds.

  • Add chopped onions and sauté for 3-4 minutes or until they turn golden brown.

  • Add minced garlic and grated ginger, and sauté for 1-2 minutes or until the raw smell goes away.

  • Add chopped tomatoes and stir well. Cook for 5-7 minutes or until the tomatoes turn mushy.

  • Add sliced oyster mushrooms and stir well. Cook for 5-7 minutes or until the mushrooms turn soft and tender.


  • Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes or until the spices are well combined.

  • Add heavy cream or coconut milk and stir well. Cook for 2-3 minutes or until the curry thickens.

  • Garnish with fresh coriander leaves and serve hot with rice or naan.
